As promised last week I said I would publish an easy slow cooker meal, suitable to eat on the go whilst harvesting or feeding in multiples.
This sounds plain and simple, but it is actually very tasty and can also be used for say Shepherd's pie, breakfast pre-prepared to have on toast or regular pastry pies, which also freeze.
Easy slow-cooked meal:
In no particular order, put all of the following ingredients into a slow cooker, and set in low for six hours.
2kg of mince
2 lge chopped carrots
2 lge chopped sweet potatoes
4 regular potatoes
1 pkt of French onion dry soup mix
1 Tbsp of garlic paste
2 Tbsp of brown sugar
1/2 tsp of salt
Pepper (optional)
2 cups of water
1 tsp of beef stock
Approx. 5 minutes before serving, add 1 cup of frozen peas. Stir, and if you need to thicken, add a paste of cornflour and water until the desired texture.
I served this on a bed of pasta, as a meal on the go.
