EVERY rib eye, captured by digital technology, and objectively measured. That's reality of a new camera used at the inaugural Wagyu Challenge, held as part of the prestigious Paddock to Palate competition at this year’s Ekka.
The camera is being developed by Meat Image Japan (MIJ) to objective measure carcase traits including rib eye area, meat colour and fat colour, marbling (intramuscular fat) and the fineness of the marbling.
The competition attracted 16 entries of seven animals. The 256 F1 to fullblood cattle were fed at Mort and Co’s Grassdale Feedlot for 350 days and processed at Oakey Meat Holdings.
