There's been plenty of emphasis in past years on eating lamb on Australia Day to show you're a fair dinkum Aussie, but the butchers at Blackall have decided that beer is what customers really want on their barbecues on Sunday.
And not just any beer - they involved the town via their social media page in deciding whether XXXX or Great Northern should be the lager of choice.
"In honour to our great country we've decided to have a crack at making a sausage we've never attempted before," they announced. "Get your votes in now!"
Surprisingly for some, it was Great Northern that won the vote by a large margin.
"A couple suggested light beer but that was never going to happen," chief instigator Wes Waugh said.
He got the idea from his cousin Clint Nelson, also a butcher, at Nelson Family Meats at Jandowae, where residents will also be able to have their beer and eat it too.
The idea caught on around town - Mr Waugh and his offsider Jess Johnson made 30kg of beef and beer sausages on Friday, mostly by trial and error.
They were thankful that the Barcoo Hotel poured the litres of beer needed straight from the tap, otherwise there would have been a few stubbies to open in the process.
Flavoured sausages are one of the Blackall butchery's key items - a look at their page shows everything from roast onion and seeded mustard flavour to vegemite and cheese given a try.
"Smoky bacon and maple is probably our most popular combination," Mr Waugh said.
We're betting the beef and beer flavour combo probably won't be on the favourites list outside of Australia Day celebrations.
