He’s known in the industry as ‘Mr Beef’ and next Tuesday, Beef Australia chairman, Blair Angus, will open up his home, property, and kitchen for the next Food Heroes installment.
Run by Queensland Country Life, the forum and property tour will kick off at 9.30am at Blair and Josie Angus’ Kimberley Station, and will include a morning tea and lunch put on by the Angus family.
Renowned for his cooking and experimental approach to using the majority of the beef carcase – Mr Angus assured there would be no chicken on the menu.
“There will definitely be a menu to celebrate the diversity of beef carcase,” Mr Angus said.
“We’ll stay away from the offal though.”
The day will kick off with a tour of Kimberley Station, and Mr Angus said he will have a few mobs of cattle together so guests have the opportunity to see the maiden heifers, cows, and steers.
Then a quick trip to the on-property feedlot will give everyone the chance to see some young bulls, and also discuss different programs in the feedlot.
A tour of the proposed abattoir site will follow, with some insight into the family’s Signature Beef range, and the way they sell and market their beef to add value along the supply chain.
After lunch, Mr Angus will provide a demonstration of a breakdown of a few different cuts of beef, with a focus on how to add value.
He said he hoped the forum following the demonstration would give attendees a chance to ask questions regarding not only his business, but the innovation being seen within the industry at the moment.
With MSA pioneer Greg Chappell on the panel at the forum, Mr Angus said he was keen to share the work they had done together in regards to bettering beef.
“It’s along the lines of breeding for eating quality,” Mr Angus said.
“But from a genetics perspective on producing functional cattle with great eating quality.”
Mr and Mrs Angus own four properties covering 162,000 hectares and run a 35,000 head herd of Angus/Belmont Red cattle.
Their Signature Beef brand is exported to a number of countries, including the EU and Asia.
